Outstanding Resource
My son started culinary school this year, and this was one of his first textbooks. He and I enthusiastically poured over it that first day, and I was so impressed I picked up a copy on Amazon.This is not a cookbook - though it has plenty of superb recipes. It is a textbook on art of cooking. Knife skills, spices, flavors, how to make stocks and sauces, presentation. This is professional level cooking from an expert chef.This is one of the best purchases an amateur like me can make. I've carried this book with me for months at work, just to enjoy it in my leisure moments. It's that good.The recipes are excellent, and the software included on the CD allows you to change portion and serving sizes easily. All of the recipes I've tried so far have been excellent.

From One Pro to Another
I got this book as a required book for culinary school. Right off the bat (as my school told me on day one), I should let you know that this is not the bible of culinary books. There's no such thing. However, as far as basic recipes, guidelines and procedures go, this book is pretty solid. It has all of the basics, and a lot of knowledge for home or professional use.

Not a student, just learning
This book isn't for the everyday cook but it is very instructional. It is a text book geared for students in a classroom setting. I am not a culinary student but I am interested in the proper way to cook meats and store food. It was great for that purpose.

We used his 7th edition in culinary school, this one is just as good for a whole lot less.

Barely used textbook - found on Amazon in optimal condition
Wanted to replace a book that my cousin WOULD NOT return (probably because it is so wonderful), and wanted the replacement in the same or nearly the same condition as mine is. Rec'd the book and CD well before order expiration, and in LIKE NEW condition. Good value for money spent.

Excellent instruction and recipes
I haven't cooked with this book very much but what I have made has turned out well. It is well written and easy to follow.

The best book to learn from
If you want to learn the right techniques of how, why, when and with what ... then this is the book for you and the only book you'll ever need. This is not the book of recipes, although you have some for illustration , but the book that will give you all the basics of French cuisine in detail (over 1000 illustrations) and even if you're not a beginner there is always something to learn from .... Even if you think you know everything, maybe but just maybe there is something you're doing the wrong way ... now with the book, you will start doing it the French way :)I'm a 'home chef' :) for more then 20 years and i LOVE this book .....I would recommend it to everyone .. no exceptions ...

Great cooking book
It has international and easy recipes that every body can follow them and cook a good meal. It gives students an idea about cooking terminology and expressions that have been used in hospitality industry.
