Tomate frito is an ubiquitous product in Spain, no supermarket or grocery shop is without it. Far superior to tomato products such as passata, it’s a must have ingredient. I acknowledge that I worked in Spain for 30 years where I discovered it, but it is an ingredient that merits a presence in every kitchen.
